Almond products

A special line of semi-finished products made with selected peeled almonds and using traditional artisan methods of production. They are used widely and very effectively in pastry shops, artisan workshops and cake factories, both in the production of baked goods such as almond petit-fours, fancy cakes and biscuits, and in the cold preparation of Sicilian marzipan fruit or delicious fillings for chocolate pralines.

Top 50 marzipan paste

High quality marzipan paste with 50% selected almond and apricot kernel content. Ideal for the preparation of products requiring the sophisticated, delicate and typically bitter flavour of almonds. Can be used either in uncooked or baked products.
Packaging: 6 kg bucket.

Marzipan Paste

Ready-made paste for large-scale preparation of uncooked items, produced with 20% selected almond and apricot kernel content. Ideal for the creation of fine, delicate, almond-flavoured products such as Sicilian marzipan fruits, flowers and other decorative items.
Can also be used as a filling for pralines and as a cold topping for pastries and cakes.
Packaging: 5 kg box.

Aurora paste

Ready-made paste for the preparation of cold items, with 10% selected almond and apricot kernel content. Particularly suitable for use as a topping on tarts and cakes, and as a filling for pralines. Competitive quality/price ratio.

White paste

A malleable white-sugar paste with a distinctive almond flavour. This easily-moulded paste is ideal for covering or partially coating items, and for creating shapes or designs with the use of stencils. White paste is especially admired for its pristine appearance and also be easily coloured in a whole variety of shades using Dulcistar artificial or natural colourings. Packaging: 5 kg box.

Spring paste

Ready-made coloured paste containing 10% almonds and apricot kernels, suitable for creating flowers, fruit, fantasy designs and decorations.
It has a characteristic delicate almond flavour and comes in the following range of standard colours: red, green, pink, yellow, blue.

Extra fine paste

Paste made with 35% almonds and apricot kernels, used in the preparation of high-quality baked products with an intense, subtle flavour, such as: tea-time pastries, fancy cakes, soft amaretti biscuits, almond biscuits, “baci di dama” (lady’s kisses), “pizzichettati”, frangipane cake and “ricciarelli”. Only requires the addition of egg white.

Delicious paste

Ready-to-use paste with a high content (45%) of almonds and apricot kernels, and with a sophisticated and unmistakable flavour. It does not require the addition of egg whites, and does not need to rest. Excellent for preparing any type of baked almond product, when following a recipe and adhering to a precise cooking time.

Creamy paste

30% almond and apricot kernel paste, for preparing every type of high-quality baked almond product. To lend the products a lasting shine, brush them with Lucidol after baking.

A paste made from 12% almonds and apricot kernels, suitable for use in all sorts of almond-based baked goods and ideal for those wishing for a good-quality commercial product.
