STEPS FOR CREATING THE CAKE:

  1. Cocoa muffin base
  2. Cocoa mousse
  3. Cocoa glaze: Coverglass Cocoa

FOR THE COCOA MUFFIN BASE (gr)

Ingredients

  • 200 biscuit flour
  • 50 cocoa
  • 150 sugar
  • 170 seed oil
  • 20 banking
  • 220 eggs
  • 1 vanillin
  • 2 salt

Proceedings

Mix all oil and powder ingredients except eggs. Create a smooth dough and then add the eggs, finally mix.
Put the dough into the desired molds and bake at 155°C.

MOUSSE (gr)

Ingredients

  • 1000 whipping cream 35%
  • 180 billy
  • 200 lukewarm milk
  • 350 Coverglass Cocoa

Proceedings

Mix warm milk and billi and dilute the mixture. Add Coverglass Dark Chocolate and make an emulsion.
Next add the semi-whipped cream and mix with a spatula until smooth and homogeneous.

ASSEMBLY

Arrange the muffin in the bottom of the glass, dress the cocoa mousse 3⁄4 of the glass, and chill in the refrigerator for at least one hour.
Arrange the Coverglass Cocoa on top and then decorate as desired.
