This clear-coloured gelatine with a delicate apricot flavour provides a uniform, transparent, shiny covering for fruit cakes and pastries. The gelatine prevents air from filtering through, allowing the freshness of the underlying product to remain intact for longer. Instructions for use: Boil 1 kg of Verogel with. 0.2 kg of water, allow for evaporation and pour the gelatine over the ready-prepared dessert.

It has the same characteristics as Verogel and uses the same method of application, but remains thicker and creamier even at boiling point.

Instructions: 1 kg of NOVOGEL, 0.500 kg of water.
Bring to a boil, let it cool, and cover the cake.

Coverglass
Mirror glaze for semifreddo, pastry cakes, cheesecakes, ice cream cakes,
zuccotti, bavarians, mousses, spoon desserts, and fruit ganache.
It imparts an elegant and brilliant shine to every preparation, which
remains unchanged even at low temperatures (-18°C).
Available flavors: DARK CHOCOLATE, WHITE CHOCOLATE, CARAMEL, BERRY,
KIWI, LEMON, NEUTRAL, STRAWBERRY, LIME.
For cold use: briefly spatulate the desired quantity without incorporating
air before spreading.
For hot use: briefly heat the required quantity in a water bath at about 45°C
or in a microwave (400/500 watts), stir for a moment without incorporating
air, and glaze by spreading with a spatula or gently vibrating the cake.
Cream-based desserts must be pre-stabilized with animal gelatin
Dulcistar before glazing.
